Edmund Lyons grew up in a small town, 13 miles outside of Bristol, called Yatton , in Somerset, Eng. He was the fourth , of six boys born to Francis Lyons and Mary (Probart?).
In both the 1841 & 1851 census's Edmund appears living in the home of his parents. When he was 19, Edmund's occupation is listed as 'butcher', a profession he pursued his whole life.
In 1852 he married , by license, Elizabeth Washer Ashley, the eighteen year old daughter of James Ashley and Ann Washer, at St. Mary's Church, Redcliffe, Bristol. The witnesses were James Ashley (Elizabeth's father )and Anne Pearce.
Elizabeth grew up in the town of Wrington, Somerset, Eng. She was the fourth child, of ten children. In the 1851 census, Elizabeth is listed as a "shoe binder", still living in her parents home. When she married in early 1852, no occupation was written in. There is some evidence in a letter by Albert E. Lyons (grandson of Edmund & Elizabeth) that Elizabeth's family felt she had married beneath her station and that she was from that point on ostracised by her moneyed younger brother Ruscombe, who also encouraged the rest of the family to do the same!
Five months after their marriage , on the 7.7.1852 ,Edmund and Elizabeth boarded the 'Sir Edward Parry' and migrated to Australia. They travelled with two of Edmund's brothers; Henry James, his wife Mary Easterbrook and their one year old daughter Mary Jane; and Alfred (Alfred was single and travelled in a different part of the ship to the couples). They all came to Australia thanks to a government assistance scheme, that was in operation at the time.The ship arrived in Geelong , on the 23.10.1852.
Edmund was the only one of the three brothers to have employment awaiting him. He and his wife were employed by a Mr. Valentine , of Ballarat , for a period of six months , at 300 pound p.a
It is rumoured that after his contract with Mr. Valentine ended, Edmund opened up a butchers shop on the goldfields, before moving to Indented Head , on the Bellarine Peninsula, sometime around 1854.
It was here that Edmund and his wife settled. Opening up the first butchers shop and slaughter house in the area. In subsquent years, two of Edmund's sons followed their father into the butcher business, while a third son became a stock dealer. There is a photo from the mid 1880's picturing both boys out the front of the "Lyon's & Sons Family Butcher's"
Edmund also opened one of Geelong's first butchers shops , on the corner of Maude and Bellarine Streets. This shop later became "Lyons & Sons, Wholesale & Family Buchers" and then after Edmund's death, his sons renamed it "Lyons Bros. Wholesale & Family Butcher's". There is still a shop on this site today, though it is no longer a butcher's shop.
Around 1858 , Edmund and Elizabeth returned to Somerset , for a short while, having one child there , Mary Sophia , who was born in Cleeves , Somerset. But by May 1861 they were back on the Bellarine Pennisula.
Edmund owned a 200 acre farm at Murradoc , on which he raised dairy cattle, pigs and bred horses. This farm was known as 'Cadbury Farm' (possibly named after Cadbury Castle in Somerset , rumoured to be the famous 'Camelot' of King Arthur).
Edmund and Elizabeth had 12 children in total and lived out the rest of their lives in the Geelong area.

  9. Known as 'Bert'. Bert enlisted in the army on the 12 July 1915 , ranked private (No. 706). He enlisted in Melbourne and embarked from there on board the "HMAT WANDILLA' on the 8th of November 1915 , bound for the Middle East. Bert disembarked at Suez , Eygpt on the 7th of December 1915. He attained the rank of Lance Corporal on the 1st of Jan 1916. From the 25th of June 1916, Bert served with the 31st Australian Infantry Battalion in France. He was killed in action on the 21st of July 1916 and is commemorated at the Villers Bretonneux Memorial , France. He was post- humously given the 1914/15 Star, the British War Medal and the Victory Medal
    Notes by Betty Wilson; ' My mother stood in awe of her brother Bert. He was a very bad stutterer, and would clench his lower jaw and grimace when trying to speak. He helped his father in the cordial factory when he left school , aged 13 years. I have forgotten if my mother told me that for a while he worked for the Sorrento Council, or if it was a community effort, but he took part in the scheme of planting Yarram grass on the Back Beach cliffs at Sorrento. As a young girl I would often take walks with my mother , and without fail she would always point out the Yarram grass to me and say" Poor Bert helped plant this". After his death, his widow sold the house and moved back to Melbourne, and made no further contact with the Hibbert' family. My mother said she never quite took to the Hibbert family' Betty further noted that for some reason , possibly because Bert's wife was a Catholic, his mother Sophia wasn't exactly thrilled about this marriage
